Hi sisters,
I made banana cookies with brown sugar frosting the other week for my coworkers and they were a hit! They are pretty easy to make and a delicious twist to the more traditional banana bread or muffin. These would make a great dessert to bring to an Easter gathering :)
Here's how to make them....
INGREDIENTS
Cookie
- 1/2 cup of unsalted butter softened
- 3/4 cup of packed brown sugar
- 1 egg
- 1 cup mashed banana (about 2 1/2 bananas)
- 2 cups of flour
- 1/2 cup of oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Frosting
- 2 tablespoons of softened butter
- 3 tablespoons of firmly packed brown sugar
- 3 tablespoons of milk
- 1 1/4 cups powdered sugar
- 1/2 teaspoon vanilla
DIRECTIONS
Step 1.
- Heat oven to 350°F
- Combine 1/2 cup butter and 3/4 cup brown sugar in large bowl
- Beat at medium speed, scraping bowl often, until creamy
- Add bananas, egg, and 1/2 teaspoon vanilla; continue beating until well mixed (it should be creamy)
- Add flour, baking powder, baking soda and salt
- Beat until well mixed
Step 2.
- Drop dough by rounded teaspoonfuls, 2 inches apart, onto ungreased cookie sheets
- Bake for 8 to 10 minutes or until edges are lightly browned
- Cool completely
Step 3.
- Melt 2 tablespoons butter in 1-quart saucepan over medium heat
- Add 3 tablespoons brown sugar and milk
- Continue cooking, stirring occasionally, until mixture comes to a boil (1 to 2 minutes)
- Remove from heat
- Add powdered sugar and 1/2 teaspoon vanilla; beat until well mixed
- Cool slightly
Step 4.
- Frost cooled cookies
- Serve to those you love!
